As a result a base wine of low alcohol (around 11.7% Vol) and very nice acidity (around 7 gr/l) is obtained. It is kept four months sûr lees until blending. Once the blend is made up, a small proportion of liqueur de tirage and special yeasts (sacharomyces bayanus) are added. Second fermentation is done at low temperatures (between 14 and 15ºC) in sparkling tanks (autoclaves) keeping the sparkling sûr lees for autolysis at least 12 months at low temperatures, moving the lees once a week. Afterwards, liqueur d’expedition is added, and the wine is stabilized with cold before bottling in an isobarometric line. Bottles are kept in temperature controlled cellars for at least 6 months before release.
