SAURUS SELECT PINOT NOIR

 

Familia Schroeder’s Estate is located in San Patricio del Chañar Valley, at 39° South Latitude, in the wild plains of northern Patagonia, the southernmost wine region of Argentina. This dry and extreme terroir is characterized by frequent winds, cool nights and longer summer days.
During the construction of the winery, fossilized bones of an herbivorous dinosaur that roamed the earth 75 million years ago were discovered, inspiring the brand Saurus.
This Pinot Noir shows rubi red color with bright flashes. Attractive ripe raspberries, strawberries and black cherries on the nose and palate with an outstanding fresh and velvety mouth feel. Lots of subtleties and elegance.

WINEMAKING
Maceration: whole berries, three days at low temperature. The juice is then fermented during eight days with selected enzymes and yeasts in stainless steel tanks. Four-day maceration at low temperatures after fermentation. Malolactic fermentation: spontaneous 60% of the wine in tanks and 40% of the wine in oak barrels with bacteria sowing.
AGING
40% aged for 9 months in new French oak barrels (medium and medium plus toast) and 60% stored in stainless steel tanks to keep the fruit.
