SAURUS PINOT NOIR

 

When Familia Schroeder winery was being built, workers uncovered the bones of a large herbivore dinosaur. The singularity of the find, inspired the name SAURUS for these premium set of wines.
Pinot Noir of medium red color. Floral and red fruits aromas, nicely integrated with fine touches of vanilla due to its brief ageing in oak. It is round and fruity, with sweet tannins and moderate acidity.

WINEMAKING
Three days maceration at low temperature with CO2, 30% of whole berries. The juice is then fermented for 12 days with selected enzymes and yeasts. Finally, the wine undergoes a post-fermentation maceration of 3 days. Malolactic fermentation with bacteria sowing in stainless steel tanks.
AGING
The wine was kept in stainless steel tanks and third use oak, being suspended on its lees periodically until stabilization and final blend.
